Black Beans & Wheat Berry
Wheat berries have a nutty taste & chewy texture. They are also a great source of anti-oxidants.
This salad is packed with nutrients, flavor and texture!
This salad is packed with nutrients, flavor and texture!
- 1/2 Cup wheat berries
- 1 Cup canned black beans
- 1/2 Cup shredded carrots
- 1/2 Cup seeded, peeled and chopped mango
- 1 Cup shredded napa cabbage
- 2 Tablespoons rice vinegar
- 2 Teaspoons toasted sesame oil
- Handful of raw pumpkin seeds
- Salt & pepper to taste
1. In a saucepan combine 1 1/2 Cups of water & 1/2 cup of wheat berry. Bring to a boil, reduce heat. Simmer for 50 to 60 minutes or until tender.
Drain liquid. Set aside to cool down.
2. Stir in black beans, mango chunks, and the shredded carrots.
3.Combine rice vinegar and sesame oil. Season with salt & pepper.
4. Serve on a bed of shredded napa cabbage and sprinkle with pumpkin seeds.
