Rice, Beans, and Peas
Rebecca sent me this recipe a while back...sounds good!

Heat 2 Tbs Olive oil in a large skillet, add:
  • 1 tsp cumin seed
  • ½ tsp crushed red pepper flakes cook 1 minute until fragrant
  • Add:
  • 1 medium onion, diced
  • Pinch of salt
Sauté until soft, 4-6 min
Stir in:
  • I (15 oz) can red kidney beans with their liquid and bring to boil
Stir in:
  • 1 cup fresh or frozen peas
Cook till heated through
Stir in:
  • 2 cups cooked brown rice
Season w/ salt and freshly ground pepper.
Serve with fresh Salsa and Guacamole.
