Rice, Beans, and Peas
Rebecca sent me this recipe a while back...sounds good!
Heat 2 Tbs Olive oil in a large skillet, add:
- 1 tsp cumin seed
- ½ tsp crushed red pepper flakes cook 1 minute until fragrant
- Add:
- 1 medium onion, diced
- Pinch of salt
Stir in:
- I (15 oz) can red kidney beans with their liquid and bring to boil
- 1 cup fresh or frozen peas
Stir in:
- 2 cups cooked brown rice
Serve with fresh Salsa and Guacamole.
