Szechwan Prawns
Here is a great simple recipe for those who enjoy prawns.
- 1 Ib raw prawns
- 1 tsp. mince garlic
- 1 tsp. grated ginger root
- 1/4 cup chopped scallions
- 2 tsp. dried chili peppers, finely chopped
- 4 Tbsp. vegetable oil
- 4 Tbsp. medium dry sherry
- 8 Tbsp. Ketchup
- pinch of sugar
- 2 tsp. cornstarch mixed with 4 Tbsp. water
1. In a wok or large frying pan, heat the oil. saute the prawns, garlic, ginger, scallions & chili peppers. Cook for 2 minutes, stirring gently.
2. Add sherry, ketchup and sugar, then add cornstarch mixture to thicken. Cook for 2 to 3 minutes longer, stirring constantly.
3.Serve immediately on a bed of cooked rice or noodles.
