Szechwan Prawns
Here is a great simple recipe for those who enjoy prawns.
  • 1 Ib raw prawns
  • 1 tsp. mince garlic
  • 1 tsp. grated ginger root
  • 1/4 cup chopped scallions
  • 2 tsp. dried chili peppers, finely chopped
  • 4 Tbsp. vegetable oil
  • 4 Tbsp. medium dry sherry
  • 8 Tbsp. Ketchup
  • pinch of sugar
  • 2 tsp. cornstarch mixed with 4 Tbsp. water

1. In a wok or large frying pan, heat the oil. saute the prawns, garlic, ginger, scallions & chili peppers. Cook for 2 minutes, stirring gently.
2. Add sherry, ketchup and sugar, then add cornstarch mixture to thicken. Cook for 2 to 3 minutes longer, stirring constantly.
3.Serve immediately on a bed of cooked rice or noodles.
