Multi-colored Bean Salad
Beans are a great source of fiber and complex carbohydrates.
Add some tortilla chips to this salad and you've got a tasty lunch!
  • 1 can red kidney beans, drained
  • 1 can black beans, drained
  • 1 can white beans, drained
  • 1 avocado, cubed
  • 1/3 cup finely chopped parsely
  • 1/4 cup scallions, chopped
  • 1/8 cup lime juice
  • 1/8 cup lemon juice
  • Salt, lemon pepper & garlic powder

1. Mix the 3 beans. Add the cubed avocado.
2. Add the parsely & scallions. Pour the lemon & lime juices on the mixture. Add salt, pepper & garlic powder to taste.
