"Creamy" Cauliflower Soup
You can serve this soup hot or cold.
(serves 4)
  • 1/2 Cup chopped yellow onion
  • 1 clove of garlic
  • 2 Cups chopped cauliflower
  •  1 Carton (32 ounces) organic chicken broth
  •  2 tablespoon all-purpose flour
  • 1/4 Cup Milk
  • 1/4 Cup half and half cream
  • 1/4 teaspoon curry powder
  • Pinch  of ground cumin
  • 1 Lime for garnish
  • Salt & pepper to taste

    1. Add Chicken broth with 2 cups of water in a medium pot. Add cauliflower, onion and garlic to the mixture and simmer over medium-high heat for 30 minutes.
    2. Puree in batches in a blender. Season with salt & pepper. Add milk & cream and spices. Garnish with lime wedges. Ready to serve!
